Reserve is drawn from a single morning milking, from a small group of Montbéliarde cows grazing the upper alpine meadow — the richest grazing on the farm, and the reason this batch is set aside rather than blended into the everyday range. Vat-pasteurized in small batches like everything else we bottle, it carries more cream, more body, and a noticeably longer finish than our standard whole milk.

It steams beautifully for espresso, holds its structure in a panna cotta, and is rich enough that most people find a smaller glass goes just as far as a full one. Organic, small-batch, and never blended with milk from anywhere else.
